Grape-variety :
100% White Picquepoul
Planted on the old vineyards of marine , bordering the Etang de
Thau.
The wine is prepared from aged vine plants grown using the goblets
method.The soil is of eocene origin.
There are breches which allow the disintergration of the conglomerate
, resulting in fragments and small pebbles.
The grape- variety , Picquepoul well adapted to the terroir and
the climate , ripens well and always keep a good level of acidity.

Preparation
:
Grapes
harvested at maturity ( 12.5° to 13 ° in strength)
Six hours of skin maceration
Pneumatic draining and pressing
Static racking of must , 24 - 36 hrs between 6 & 8 ° C
Transfer into barrels after a good start of fermentation in tanks.
Fermentation in barrels. Oak from the region Vosges and Limousin.
They are replaced third by third. Their toasting is light to medium.
Ageing : after fermentation in wooden barrels for several weeks
, the wine is left on fine lees with a stirring of the lees once
a week during its preservation period of about 8 months.
No malolactic fermentation.

Tasting
:
Very typical , under its greenish yellow color , this wine offers
a discreet but very fine and floral nose.
Full flavors , long and rich. There is a mixture of floral aromas
mixed with nuances of
banana and citrous fruits (citronella and grapefruit ) with a peach
and apple-vanilla finish. Neat and frank , a bit wooded it integrates
harmoniously, a few months after bottling..
A range of very interesting complex aromas contribute to the originality
of Picpoul de Pinet vinified in new oak barrels.
*The acidic peak usually found in the Picpoul wines is quite lessened
here.

Serving
temperature :
Between
12° C and 14° C uncork the bottle half an hour before serving.

:
This wine accompanies sea food , fish in sauces and
certain cheeses.
