MERLOT - CABERNET
"Hugues de Beauvignac"





Grape-variety :
70% Merlot - 30% Cabernet
The vine plants have found favorable terrain on the clay/calcareous soils of the COSTIERES de POMEROLS.

Preparation :
Grapes haversted at maturity ( 12° - 13° )
Long maceration , about 10 to 15 days, depending on the vintage.
Traditional vinification thermal-regulated between 20° and 25° C
A number of these wines are matured in oak barrels since 1989. Ageing in bottles is possible for a few years.

Tasting :
A ruby robe , here we are , a « vin de pays » from the Cotes de Thau rich and concentrated.
It opens up with a range of interesting aromas : scents of ripe fruits and venison mixed with nuances of vanilla , coffee and different spices.
If the mouth is a bit rough , this leaves us to think that it will go through a good ageing.

Serving temperature :
16° C.

Gastronomy :
Wild meats such as game and certain cheeses.
