Grape-variety : 100° White Chardonnay
This wine is made from young vine plants grown in clay/calcareous
soils situated a few kms away from the 'Etang de Thau'.
Preparation
:
Grapes harvested at maturity (12.5° to 13° ) , selected
from the "terroir".
6 to 10 hours of skin maceration.
Pneumatic draining of premium juice.
24 hr dacantation at 6-8° C
Thermal regulated fermentation at 16° C
No malolactic Fermentation
Tasting
:
Beautiful pale
yellow robe with golden yellow tints.
Fine nose , dominantly floral (peach ,medlar ).
Harmonious and full mouth. In this equilibrium are found fruity
as well as vegetal notes.
Serving
temperature :
10° C.
Gastronomy
: Accompanies fish in sauces, fatty fishes ; a winning
pair with smoked salmon.
